Is it enough if I only do that on the ground floor? Or should I better also remove the screed on the upper floor and attic?

You only need to insulate against the floor slab and the soil on the ground floor.

You can also do it upstairs, but more so because with a conventionally installed underfloor heating you can keep significantly smaller distances than with milling. From an insulation point of view, it is not that important, since under the warm upper floor there is also a warm ground floor.

Have you had a professional room-by-room heating load calculation as well as the installation of the underfloor heating calculated? With your specifications, e.g. regarding the desired room temperature or supply/return temperature of the heat pump?
If not, that is the first step anyway (e.g. from the engineering office Heckmann).

this is the structure in the bathroom, it has already been gutted and you can already see the layers. I think that I will completely remove the screed on the ground floor and insulate it anew. Or would this layer be sufficient and is it enough to just mill it?

If you want to install a heat pump, I WOULD remove the screed everywhere (jackhammer, two buddies, one Saturday) and rebuild everything to get proper laying distances.

Once again: has everything already been calculated and planned by a professional?

Yes, I have a heating load calculation; it says 8303 W total heating load.

So I told the heating engineer that I will mill, and he also planned a Vaillant 7.5 KW. Because I am also replacing the windows and front door. I just had the idea to remove the screed and insulate anew on the ground floor. But for cost reasons, I would still mill on the upper and attic floors because it is easier and the insulation there is not important. The company also said they could mill with a laying distance of 10 cm.

So I have now completely removed the screed on the ground floor, it went faster and easier than expected. I would just like to know exactly how the new insulation setup should be.

You have WLG 024 6cm PUR with aluminum foil laminated, on top called grid foil.

But aren't you also putting in impact sound insulation?
