So far, I had no reason to deal with "Siri."
Does it work like this, that you have your phone with you and say to "it": "Open the door!"?

Yes, whether phone or watch doesn't matter. I find it doesn't get more comfortable than that.

Years ago, when I investigated whether "voice assistants" were something for me, I found this - just like now:

I do not assume that I urgently have to expect to be eavesdropped on; nevertheless, I still decide against it today.
I practically always carry my phone with me - and of course it can be lost. But I assume that I will notice this quickly and act accordingly. Therefore, losing my phone seems less concerning to me than the possibility of being eavesdropped on without noticing it.

This is just my personal comment on the situation and "I don't know better."
Everyone does what they think is sensible.

(I am very glad that we can decide such things ourselves)

And hopefully the microphone is turned off. Because otherwise Siri & Co. could also be listening permanently (although you do not know whether the microphone is actually turned off).

there are always risks, of course.
for political reasons, I have not been on Face-book or the Twitter successor for years, although I regret no longer having these means of communication.
somewhere you just have to draw your line.
