I quite like this one for a further development, but I see the necessary 1.40 in the kitchen rather in the width ;)

Why I reject the others (except one):
The entrances appear awkward from the hallway. There is an imbalance in the foyer everywhere. It is often bad when the entrance to the open plan room is on the side, or when the foyer only offers "space" on one side of the door.
If it can't be helped, so be it.
But you have all possibilities.

Where do you see the running direction indicated?

So the planned running direction would be from north to south. I originally had the idea to do it the other way around, I think that also looks very nice in the dining room. But in reality, it is probably very impractical if the staircase is located in the south between the living room and dining room.

I quickly tried again to shift the landing staircase to the slightly favored east-west orientation. It doesn’t look completely wrong to me, I would still have to plan in a wardrobe.

Without a basement 8 sqm HAR is bold...

For the floor plan, I would integrate the area under the stairs into the utility room.
