If the stones are clad, the appearance should be irrelevant.

Just be aware that not much will fit into the bed at that width. A few years ago, I built a 2x1m bed from 4cm thick construction boards at our place. When it was screwed together, my wife joked that it looked like an oversized coffin because it was significantly larger than typical garden center raised beds. When the bed was then in place and she planned her plants, it suddenly turned out to be much too small. I already had the feeling I was gilding the plants at our place. No idea what your brick and clad bed will cost. In the end, little more than 1m² of planting area remains. I find 1m height a lot, though.

I would not make that out of stones.

On the one hand, the material is not that light, it also costs quite a bit of money and work to erect the part. And if it ever needs to be removed, it means a lot of time, work, and cost to dispose of the debris.

Therefore, I would rather make it out of wood.

And with the same external dimensions, you have a bit more space for planting.

I will probably have to explain that a bit better. In its basic purpose, the "Beet" is one of several walls to be built that frame the terrace and structure the property a bit. Just a wall seemed boring to us, so we decided to make it as "raised beds" in which we can plant something that also provides some privacy. In the end, they will not stick out a full meter from the ground, more like 85 to 90 cm. The other raised beds will be bigger than the one I am currently working on as a first test. For the others, staggering the stones is not a question. For the small one, the dimensions are just such that it feels like a lot of work for relatively little effect, so I thought I'd ask :-) and I am very happy about the many answers, thank you very much!
