I suspect you not only have the Proxon domestic hot water heat pump but also a combined device in the form of an air-to-air heat pump, that is, a central building ventilation system with heat recovery and an integrated heat pump. In every living room there is one (or more) supply air duct(s) (with heating elements for extreme cases) and the "smelly rooms" have exhaust air. That would be pretty much our system.
A wood stove produces significantly more heat than needed in one room in a new building. The ventilation system therefore has a stove mode. From my understanding, this simply means that the ventilation level goes to maximum, which causes the heat to be distributed better throughout the house and ultimately also reduces the effort needed from the heating system. You should therefore use this mode when the stove is on. However, it is not mandatory; nothing is harmed if you don't use it.

I really appreciate the direct answer. Yes, that is exactly what we have, and we are unsure about the settings.
I have read the manual, but it is even more confusing.
So just to be sure:
HAND OPERATION is when the stove is not on, and STOVE OPERATION is when the stove is on, right?
But it is not mandatory, as far as I understand.
