Power consumption of a heat pump

Unfortunately, I don't have more than that. I don't know anything about a controller. But honestly: what does that have to do with power consumption? There is no night shutdown. What else would be an option?

Yes, I have already found those too. There is a newer controller that I found, with a weekly planner. Then also summer and winter programs. From other manufacturers, I know of nested submenus where you can find settings that you wouldn't expect to be there. Or you try changing something experimentally, for example, set the night setback time from 10 to 11 pm and see what happens. If you then also have plateaus after 10 but before 4 am, the logic is just strange...

Just a wild guess: is there actually a separate regulation for hot water in something like this? So that it might be available from 6 o'clock or something and therefore it starts a little earlier?

The people don’t want to accuse you of anything but just want to help. And yes, in doing so they simply don’t know what you know. And your first statement was just "No, all accusations!". It’s already good to know that basically no night setback is configured. For the people who know a bit more (not me..) it does seem like there is one, which is why it can be useful to look for other settings that might have a similar effect.

The heat pump starts heating around 4 o’clock, for whatever reason it is always the same time, which you apparently don’t even want to know. Assuming that as given, you would now have to say where you see the peak that is higher than the 5KW of the heater.

I just tried to find out what kind of control it is through the image search. If you search on Google for “Rangieren bei der Wärmewende”, you can see the control a bit enlarged. There you can see visually a bit more, but unfortunately the type is not visible. From the whole design (convex shape/red and blue bars at the bottom edge), the control looks similar to current Dimplex controls, e.g. “Dimplex Accesspoint PGD”. Unfortunately, I didn’t get any further there, but maybe it helps to get a manual that way.
