I don't see a problem with that now. The concrete doesn't cure evenly but starts very fast and then slows down. The masons often stand on the intermediate ceiling 1-2 days after concreting and continue working.
85x85x85 seems massively exaggerated to me. 40x40 should be sufficient, especially with 200 kilos spread over several foundations. As far as wind loads are concerned, that's also enough if it connects well with the soil/gravel around it. For anything that spreads, leave at least 10 cm edge distance. Ideally a bit more
Did you set up your pergola directly on the house? Then you have to pour the foundation right at the house, right!? Besides, wouldn't it be difficult to leave the 10 cm edge distance that way?
