Then talk to him about it again. Tell him that you are happy to show your house to individual interested parties (perhaps even after you have moved in) and also to share your experiences. But also make it very clear that you do not want an open house day in your house and that this was not agreed upon.At the time of signing, it was not foreseeable that he would carry out such actions with finished houses. We confronted him directly and he (the manager) said that these were only shell construction viewings with individual interested parties.

Oh please - who, at least with some reasonably usable mind, would let an innumerable crowd of people through an almost move-in ready house if they are liable for all damages caused by the viewing? Why do you think your provider announced this before the painting and flooring work?
We also use the shell construction phase and sometimes walk through the house again shortly before handover with selected interested parties. But then there is no one among them that we would have to worry about even a tiny stone sticking to the shoe.
I can't help but feel that the good "Payday" just wants to stir up the users a bit.
