Optimize and expand the floor plan of an existing house

Hello dear ones,
We have just bought my mother’s house. It is just under 115 sqm. We live here with 6 people and need a bit more space.
For us, there are now two options: either we convert the attic above the main house into 5 rooms and a second bathroom. Then the kitchen would be moved one room further on the ground floor (to where the bedroom and living room are now) and we would combine the kitchen and dining room, and the current kitchen would be converted into an entrance hall where shoes and coats would be placed.
The other option, which is also my favorite (although considerably more expensive), would be to convert the adjacent barn. Then the kitchen and dining room would move into the barn and the rest of the room layout would remain the same. Especially when thinking a few years ahead, it is quite practical to stay on one level.
What do you think? Or do you perhaps have ideas that we haven’t considered yet?

Information is a bit sparse – especially the sketch. Where is the entrance? Is this the ground floor or the future upper floor? What is the roof pitch? Is there a knee wall?

I would always recommend converting the attic rather than remodeling the barn. A barn is not simple, and often it’s cheaper to tear it down and build new. Usually, it’s also way too big and you risk financial overstretch. With the roof, you have the advantage that all the lines are at least already nearby. Also, the insulation from below is probably of higher quality than in the barn. Whether this is the case here, you would need to gather everything you know.

Thank you very much for the reply.
Yes, we do not have all the documents yet, so I could hardly answer the questions.
The main entrance is in the kitchen. It used to be in what is now the dining room, but now there is only a patio door there.
And the floor plan is our ground floor where we currently live.
The attic is completely empty and just one room. Until a few years ago, there were two rooms there, but they were converted back.
But then we will first gather more documents. Thank you very much for the reply.

Stable? - Hopefully, we're not talking about the outdoor area here...

But a stable is actually always an outdoor area, or what is meant by that? It is directly adjacent to the house, and we are currently using it as a shed, and our chickens live there.

How or where would one get into the attic?
