Bottled gas is propane, natural gas comes from the pipeline. With gas grills, you have to keep that in mind, I think pressure regulators and nozzles are different. With a stove, that should also be an issue.

sure. With every gas cooktop I have bought so far, 2 different sets of nozzles were already included

I don't think it's worth it.
I used to want to build with a gas stove as an ambitious cook. Definitely. Then those crappy ceramic cooktops came along, and the desire grew. But now there's induction, which combines all the positive features I need for cooking. Quite fast and quite clean.
For half the year, you can also let loose outside with a gas grill and/or charcoal grill.
If I had had space and money left over, I would probably have wanted this Teriyaki area instead – which I now have on the grill.
If I were to build again now, I would have a 2-burner induction stove for the kitchen and nothing more.

There is one reason against induction: if you have a pacemaker. Then you should not stand in front of it. So if you also like to cook at the same time, an alternative would be good.

I think then quite a few things won’t work, right?

Yes, at the airport you don’t go through the gate but always get special treatment. Microwave. I don’t remember what else. I only know this through my mother.
