Lower the ceiling? How high to build the ceiling wall?

Spots and indirect lighting are practically mutually exclusive.

I might need to add what this planning is for. This is purely the planning for the ceiling. The spots near the wall are only meant to illuminate the wall. They therefore have a relatively narrow beam angle to create this arch pattern. In the kitchen, I would place spots to brightly illuminate the countertop. However, this is more about bright and well-distributed light than about coziness.
The attached part in the living room is mainly supposed to be indirectly illuminated by the LED strip, together with the spots on the wall. The spots in the suspended sail would be there to brightly light the table in case you actually do something there that requires light. And whether these are spots, panels, or a ceiling light is relatively irrelevant for the ceiling planning.
Floor lamps etc. will come later where light is still needed.

ah ok. So then I would recommend hanging and not planning any fixed doses at all. Rather, just consider what you want to serve separately from where and roughly plan outlets. Then you will still be flexible with the concrete execution.

Off topic regarding the lighting issue
Room 3, the guest bathroom, I would definitely have the door to the room open outward.

Toilet and shower will be swapped there anyway.

That wouldn't matter, it still gets very cramped in that room and if something happens, no one can get in.
