So in my layman's opinion, the question is: Is it really that complicated to set up and take down the dryers? I rather think not. Things won't start molding after just 2-3 weeks, but less moisture is of course better. Personally, I would have it roughly calculated and tend to get the house dry sooner rather than later, even if that means additional costs. If a delay of other trades is to be feared, I would do it that way anyway.

If you have wooden windows or other exposed wood, I would also tend to dry.

I suspect that the additional costs are well balanced with the benefits here.

Shock ventilation is not enough. The windows have to be open all the time and everything must be aired out thoroughly.

I don’t see the effort there either. What do they want to charge extra for? A trip there and back? Setting up and taking down should be limited to just rolling in and out. Is there maybe a possibility to store the parts with a neighbor for a few days? Then you can take care of it yourselves.
