The paint covered well on the 2nd coat.

How many sqm did you ultimately paint/roll with it?
The consumption is usually higher than stated.
But the stuff should provide coverage!

From their homepage:
AlpenKalk already covers with one coat - You will be satisfied. Guaranteed.

About 50. Their indication of 2 coats for the bucket is probably not too much except that they advertise coverage already after the 1st coat. A second coat should only be necessary with strong contrasts. But not in this case. It is a gypsum plaster. In some places I have the feeling it does not cover at all, in others it covers great. But I have primer everywhere (also from alpenkalk). Slowly I start to think something is wrong with the plaster after all. How can you recognize sintered surfaces on gypsum plaster?

You can actually see this when applying the primer. If the plaster darkens and the primer is absorbed well, everything is fine. If a sintering layer has formed, it does not properly absorb the primer.

Arrgh, then that might have happened. I noticed that when applying the primer, it was already not becoming evenly dark... it all has to come off, right?

I think so. But it wasn't necessary for us, so I didn't pursue it further. It wasn't perfectly even for us either, but apparently sufficient, you could at least see that everything was absorbed. I once read something about citric acid or mechanical removal.
