We have a similar plan to you. We also have the roof open to the upper floor. However, our roof is still covered with "standard tiles." We have an asymmetrical roof, and on the flatter side, it is 18 degrees.
We have already lived in a similar apartment. The noise level is actually not so bad, as long as you don't plan roof windows or skylights on a flat roof (in my opinion). You can definitely hear the pattering of raindrops on roof windows.
I would forgo a roof window in the bedroom, despite the perhaps once-in-a-lifetime view of the starry sky. However, I could imagine that if you are building two stories, you probably have given up on roof windows anyway!?
