Help with preliminary planning for house construction

my wife and I plan to have a house built at the beginning of 2016. We were able to secure our dream plot some time ago.

Since neither of us has (yet) any knowledge about house construction, we naturally approached some companies (Heinz von Heiden, TuC, Massa Haus, etc.) and asked them to send catalogs. So far, however, we have not been able to find our "dream" house exactly as we want it, mainly because of the floor plan.

Companies would implement our ideas too, but since this deviates from the standard, some additional costs will probably arise (according to the forum).

Since some friends and acquaintances already have experience, we naturally asked them as well. Now an acquaintance told us that he built with a civil engineer. This person apparently took care of everything from planning, supervision, to acceptance. The costs amount to about 20,000 euros.

My question now is whether I should also organize my building project through him or leave it to one of the companies mentioned above. Is the profit margin of such companies so high that my costs/investment will balance out in the end? Has anyone had experience with this?

With some of these house providers where you have already been (we built with a subsidiary of the above-mentioned), you can make changes to the floor plan up to a certain extent for free (at least that was the case with us, we moved some walls and swapped rooms and also had additional walls built free of charge).

There are more of these companies that build with free floor plan selection than one might think.
