Hedge or similar for a surrounding roof terrace?

A clear case for bamboo or pampas grass. Since it's in pots, you can even use Phyllostachys. I believe there are brutally fast-growing varieties. But it needs a lot of water and not all like a lot of wind.

I had ruled out the fast-growing ones so far, especially since you can’t just prune bamboo easily. As I’ve read, cut stems die off. The goal is a "potted hedge" that stays around 90-100 cm high. Are the plants you suggested suitable for that?
Well, and the high water demand is also not ideal because we’re away for a few days every now and then.

Ideally, from my point of view, it would be to buy boxwoods already about 70-90 cm high. They grow slowly and need less water. However, they are hard to get in that size.
What do you think about that?
