Companies I have found so far through a Google search and considered interesting:

We had appointments with all three mentioned companies and some others as well; if you have specific questions, feel free to get in touch. Otherwise, here is the summary again:
Härtter was eliminated because they only had available appointments over a year later.
AWS was significantly more expensive than the other providers (about +50,000 euros adjusted for the equipment). However, they made a competent impression.
Haus der Handwerker had the cheapest offer, but based on experiences here in the forum and our gut feeling, they were out.
For the top 3, I will quote myself from the thread linked above:
U-Haus had a nice contact who put in a lot of effort. The offer was priced in the mid-range, and in the end, the gut feeling really decided. I can’t really say what the decisive point was. If there are questions here, feel free to ask.
Hauser had the best price after HdH and also a very nice contact. You immediately felt well taken care of and everything was discussed in detail. At Hauser’s on-site, there is also the "standard equipment" on display, so you can get an immediate impression. We still find the concept with Liapor precast walls relatively good and could have imagined it. Very positive was that they questioned the development plan instead of just complaining about it. There were 1-2 points that were not entirely clear from my point of view, and usually everyone immediately said "no go", but Hauser said that this should be clarified and tried. A small negative point from my perspective is the accessibility, which was not always optimal, and one waited ages for callbacks. But I believe they simply currently have an extremely high workload. With Köhler, the building feeling also matched. A down-to-earth family business that not only builds houses but also larger projects. Very nice contact with a lot of experience, and here too you immediately feel welcome. They took a lot of time in the conversations even though the contract was not yet certain. Köhler comes from shell construction and brings a lot of experience from there; additionally, they build a lot in the area and know all relevant local companies as well as contacts in the municipalities. They also speak openly about costs, and contact with other builders is not an issue. We both had the feeling that honest and down-to-earth work is still done here and that a lot of importance is placed on the customer and customer satisfaction.
For us, the ceiling height was a negative point with Hauser. They install a suspended ceiling everywhere, I think 12-14 cm, to run pipes and cables there. That would have meant about 5-10 cm less ceiling height for us compared to the other providers. Sounds like little, but it was important to me.
With Köhler, we have now completed the entire planning phase. It is positive to mention that you first sign a planning contract for a smaller sum of money. This then includes the plans up to and including the building application. So you have not yet signed a contract for the house. Once the plans and cost calculation are in place and the building application is submitted to the authority, you can decide whether you want Köhler to also build the house or not. If not, you only have to pay the planning costs and receive the plans handed over. During the planning itself, they take a lot of time in several appointments to discuss different variants and answer questions. We are very satisfied with our current floor plan. The only criticism is that you do not communicate directly with the architect but with Köhler, who then passes it on. This sometimes leads to one more loop. By now, however, we have the architect’s contact details – maybe we should have asked for that earlier.
