What exactly becomes impractical at, for example, 2.8m?

Change the light bulbs maybe? (with our current 2.45m my husband can do that without any tools :P ) but otherwise I don’t know what’s supposed to be impractical about it

Well, if that's the reason, I can only smile.

For some things, it’s worth accepting "impracticalities." Everyone knows that. One person likes high ceilings, another drives a sports car, a third makes coffee with an espresso machine, a fourth builds on a slope, a fifth has pets... If we had wanted to build practically, we would now be living in a completely different house. But that wasn’t a priority, and we’re wondering how we can install the power tracks without breaking our necks. We have to borrow scaffolding or a mega ladder. So what. The room spans over 2 floors and up to the roofline. It’s about 7m up to the lights. There’s nothing practical about it. We love it.

okay, a double-height ceiling is a whole different ballgame compared to the question of whether the room height is 2.5m or 2.8m of course you need scaffolding for that (my parents-in-law have something like that too, but it also has advantages, the Christmas tree is about 3 meters tall every year )

Length standard curtains, remove spiders and flies, the higher room echoes more, change lamps, construction costs, building height zoning plan.

Points are only relevant to us and there are certainly people who don't care.
