Building surveyor for the house. For demolition later, the soil surveyor

The development plan or the building authority will tell you that. You are open to everything anyway :)

Regarding your questions. I think you can find a master craftsman who does that. It could also turn into a construction contract, and he is not supposed to advise you for free. A soil survey is something completely different. That is done by a geologist. They drill and analyze the core sample. Such a report costs around 1000 euros. I consider that exaggerated. The site is already developed. A master craftsman can also tell if there is good soil or if a lot needs to be replaced just by looking. Not so long ago, people built entire castles and cathedrals, bridges and stadiums without any surveys, relying solely on the expertise of the masters. And some of those buildings still stand today.

If I want to inspect the house additionally, should I bring a master craftsman + expert or is a master craftsman enough?
