To install a fireplace insert, a proper stove has to be built, which no handyman service does.
5-10k€ is normal there, without a fireplace insert, without a pressure monitor, etc..

I would take care of the masonry, plastering, and connecting the pressure switch (Wodtke DS01L)

Well, with a bit of persistence you can find a chimney builder who will go along with it. But can you do it? Our chimney builder worked on the chimney for 4 days with 2 apprentices. Ergo, almost 100 hours of work – they also had the tools and knew what they were doing. The material also costs a ton of money. Fireclay is very expensive. Stone slabs are expensive. I hope you have planned a [Leerrohr] from the chimney to the control cabinet, otherwise the pressure switch is pointless anyway.

Two of my friends also did it completely on their own and had it approved by the chimney sweep. It really looks great. I will also enlist their help. I have laid conduits for electricity and for the pressure hose, depending on which pressure switch I will install. However, my wife has completely lost interest in a chimney; I can understand that, but I'll still try 1-2 alternatives.

Ours was completely clad with drywall. We skipped the fireclay - it wasn't supposed to be a sauna, just to improve the appearance.

Well, if you light a 7KW fireplace in a new building, you'll have a sauna in no time anyway. It's only cozy in theory.
