Are additives avoidable in concrete?

I would like to avoid additives in the concrete for our concreted basement (WU) as much as possible. Now, I have heard different statements from various construction companies about this, ranging from "no additives are needed" to "I can't influence that, the concrete plant does it" to "there is a lot of chemistry in it."

Are additives necessary, or can you completely do without them? Can the construction company order the mix from the concrete plant, or do they simply have to take whatever is currently mixed and offered?

What do you think kind of harmful additives are added there? Usually, for a basement, at most some leveling agent is included and that is simply put soap.
