Which interior plaster should be chosen? Lime plaster/lime-cement? Experiences?

See Knauf rotband. That is such a classic that they like to use, or Knauf 75 Maschinenputz. That is classic gypsum plaster, mineral-based, vapor-permeable.

Huh? Do you know what you're talking about? Of course it is mineral and vapor-permeable, what else! Always has been. Gypsum. Look up in Wiki what gypsum is. No chemistry or anything.

Lime, lime-cement, clay and gypsum - all mineral and all vapor-permeable.

I don’t know if certain types of plaster are actually able to positively influence the indoor climate and if so, how they manage that, because they all absorb and release moisture. Especially with [Kontrollierte-Wohnraumlüftung] that wouldn’t bother me at all.

Whoever likes the respective surface structure and does not wallpaper or paint thickly afterwards should choose based on that, otherwise I would say the choice beyond the price lies with the preferred craftsman.
