Sounds like a lot, a lot of work for the professional and a mental strain in self-attempt.

Warranty should also be a topic here in my opinion. With self-performed work, there is none.

Hi, regarding the scope of the drywall construction, I can only say one thing: you have probably received an offer from the drywall contractor. It usually states exactly what services you get for 25,000€. If you can't figure it out yourself, you should post the offer or send it via PN. But to say in general what services you can expect without an offer is impossible.

As a rule, drywall construction at an FH always means that you only have the closed shell; all interior walls are also built using drywall construction. However, this raises the question for me of how, for example, the connections for water/sewage are supposed to be handled?

Are you sure that the TEUR 25 is "only" allocated for drywall construction or perhaps rather for more?
