I have already devoured quite a bit of the elephant

Ground floor
- Living / Dining 40 sqm
- Kitchen 14 sqm
- Work 10 sqm
- Technology / Utility room 10 sqm
- Shower WC 3 sqm
- Hall / Wardrobe 13 sqm
—> 90 sqm
Upper floor
- Sleeping 13 sqm
- Dressing room 9 sqm
- Bathroom 13 sqm
- Child 1 17 sqm
- Child 2 17 sqm
- Reading corner (around seating window / dormer) 3 sqm
—> 72 sqm

The whole thing is supposed to be built without a basement, therefore a cold roof with at least 25 degrees pitch will be necessary.

That makes me happy :)

... and these individual square meter numbers now again?

Well, the upper floor is definitely missing a hallway and space for the stairs.

These were the considerations of how large the rooms should approximately be and what room requirements we thus arrive at. All, of course, +/- …
Wrong approach?

No, I just innocently asked a question for understanding ...

... to explore your methodology: "taken / derived from a model" / "dice cup / coffee grounds oracle" / "we have now, plus improvement surcharge" ? ...

... means: if the banker frowns, it will be reduced in x-percent steps?

I find a 30° roof on a two-story building quite appealing and not bulky. It also always depends on what else is around. If there are only bungalows, it looks different than if everything is two stories. If I have the choice, I would also build two full stories. Maybe I would reduce the eaves sides to 2m or 1.80m to make it a bit more pleasing. Your example image shows imho also a two-story building - if you like it that way, then build it like that.
