Network planning for a newly built semi-detached house - sensible or possibly overkill?!

Which Ubiquiti devices would benefit from such an irresponsible action? And is this increase in transmission power really only triggered by the "location" in the configuration?

At least with the UAP-AC-LR. With the others, you should only try it if you are traveling to the USA...

I don’t know if that is still the case. About a year ago, at least, it was still possible to increase the transmission power with a mouse click without much effort. However, this can definitely become problematic because you would then be violating the Telecommunications Act, which carries severe penalties — provided that the "enhanced cell" is located. And actually, the normal transmission power in an average house is more than enough for one floor.

I don't really see the "easily" in 2021 with 5 (and soon 6) GHz anymore, but it works if you can live with some restrictions. Of course, if you can get by with 2.5 GHz, a single access point is probably enough most of the time. By the way, when it comes to transmission power, one should not forget that it doesn't help at all if the client can "hear" the access point, but the client's transmission power is subject to the usual limitations and therefore the return path no longer works. It's a bidirectional communication - or none at all. ;)
