Is the interior finishing weather-dependent?

Hello everyone!

Our topping-out ceremony is just around the corner and after that we will be finished with the shell construction for now. Then windows and interior work will follow. When asked what will happen at what time, we do get an approximate timeframe, but always with the note that at this time of year everything is very weather-dependent. Now we wonder: If the roof is covered and the windows and doors are installed, then we have a watertight house for the time being. So why are the interior works still so dependent on the weather?

Without heating, it still gets really cold and frosty inside the house.
