How high are your living expenses after building a house?

each have 300-400€ Riester/Rürup+BU. It is with progression, I can't tell you the exact amount to the euro.

In addition, there are 180€ for the VBL for me, and roughly 70€ for the VBL communenderivative for my wife.

We do not have a defined savings rate. Whatever is left over simply is not spent. My wife still pays a small amount into [Riester]. Whether that makes sense, I do not know. We fully utilize [Sondertilgung], we have invested in photovoltaics. Both provide a decent interest rate for today's times and are almost risk-free.

We do need to take care of risky investment opportunities. Insurance policies are not an option for that.
