We are currently replastering one room after another (old building) and are using lime-cement plaster for this. In the bathroom, we also used gypsum plaster back then because it is supposedly easier for beginners. However, I can't really relate to that; I find both can be used equally well from my perspective. The gypsum plaster has worked wonderfully in our bathroom for 3 years, but we have a small bathroom with a large window and we ventilate and heat it well.
I chose lime-cement plaster because it is more impact-resistant and mold supposedly has a hard time growing on it. I can confirm the first point, but I don't know about the latter since we don't have mold anywhere in the house. We will gradually use it throughout the rest of the house. I have also successfully used it on the shed base, so outdoors. In a new building, I would probably also go with lime-cement plaster; I find it higher quality, more solid, and mold-resistant. Only if the budget is tight would I save on something like that because you can't easily change the plaster, and it should do its job for many decades.
Only in the basement do we use renovation plaster, but that is also an old building.
