Grouting concrete paving stones on the terrace

We are having anthracite 60x40x8 cm concrete paving stones laid on our covered terrace.

I am currently thinking about what would be best to use for jointing. I have heard something about "hard" joints so that ants, etc. cannot settle there?!

What would you recommend?

There are joint mortars for tiles that are waterproof. Otherwise, quartz sand

we have made fixed, water-permeable joints, we like it a lot.
