we ended up at 293,000 and certainly invested another 10,000 in all sorts of things in the first year, from shovels to lawn mowers

We have now also done a cash check. In total, we have spent 475,000 euros:

303k for the house (200 m² living space + 45 m² garage) including drainage, earthworks, site setup, etc.
80k for the plot
21k for outdoor facilities
18k kitchen (Ikea with Miele + Siemens)
6k connections
5k for material for own work (small stuff that adds up)
9k for incidental purchase costs + surveying
5k wood-burning stove (chimney included in house price)
8k painting work
7k for oak floorboards
13k for natural stone floors

In the end, the house cost almost exactly as much as expected. We saved many thousands with discounts on the payments, which then went into the floors, so it could have been cheaper as well.

Sorry, it is an absolute mystery to me how someone can think about a construction project during an ongoing insolvency with only €7,500 in equity. And then also want to close the financing gap with a consumer loan.

because everyone is doing it right now
because rent is a waste of money

The project is unrealistic. Creditworthiness is not present, liquidity is okay, no equity and probably a much too low cost estimate.
