Unfortunately, compliance with standards requires the use of trained specialists. Associating smooth striking with the mason producing frayed joints in rapid succession and a visual improver spreading an even mortar level over them is something we've recently seen before:

@everyone
first of all thank you very much for your previous comments.
Attached is a picture of the current "joint situation"
There are about 3-4 of these holes per m2.

It looks like the wall builder just quickly threw a lump of mortar into the butt joints and pressed the next stone against it. In doing so, irregular joint thicknesses were produced, some of which were narrower than the tool with which the aesthetic adjuster brought the joints to a uniform depth. The characters of a DIN standard are presumably unreadable to both gentlemen.

Facing brickwork or brick veneers are simply not suitable for daring, virtuoso self-taught workers; trained professionals must carry out this work. Ventilation joints are certainly not the case here, but plainly sloppy butt joints. And otherwise: is the appearance okay, i.e., is the "used look" ordered?

The joints will probably be cleaned again before grouting and I will insist on filling the butt joints. Otherwise, the "used look" is okay for us. We did not want a sterile clinker appearance. That’s why we chose this very irregular stone.

In this sense, the irregular joint pattern is then not disturbing.

Here, just for the butt joints, this will be sufficient. Normally, you don’t do a proper joint finishing only after the mortar has already hardened.

But the photo shows that it has not been grouted yet? The joint is set somewhat far back (a matter of taste)?
From my point of view, the joint pattern is unacceptable, someone either didn't feel like it or had no idea (joints too narrow / stone spacing possibly disadvantageously calculated).
