With "eager" fathers-in-law, I’ve had my very own experiences. If your father-in-law fits this profile even a little, I already feel sorry for the construction manager accompanying the project.
That’s really a lot and I am surprised that you want/may insert EL "between" the trades; or that the craftsmen tolerate this. Watch out for the contracts regarding liability/warranty/acceptance; I am fairly sure the trades involved will protect themselves there.
I doubt that EL will be enough to end up with "only" €220,000 on the clock... if you’re not mad at me. However, I wish you much success and all the best and keep a reserve for extras/unforeseen circumstances.

we will take care of the following things in EL:
Construction of the entire garage
Carpentry work
Installation of windows and doors
Partial electrical work
Laying the floor
Insulation inside and outside
We have scaffolding in the family
