I just don’t want to take any risks with the olives, since we're attached to them.

But these are plants that are SIGNIFICANTLY more resilient than the lemons. Even if the crown should freeze off, the olive will sprout vigorously again – you know yourself how aggressively an olive grows. Every year up to 50cm of growth with sufficient light, water, and some fertilizer.
