Hello,

which tolerances do I have to accept as a client for the masonry?

I don't look at every millimeter, but in one room, about 3 cm of room width are partially missing.

DIN 18202: Tolerances in building construction.

Otherwise, available in more detail with explanatory sketches as a technical book in various versions.

It also depends on which level of accuracy has been contractually agreed upon, e.g. regarding the requirements for the flatness of surfaces.
