In your case, I would divide the lighting into 3 groups:
1.) For example, 3 pendant lights as island lighting. Or just one continuous pendant light. But of course, it's all a matter of taste. Make these dimmable and ensure that at the maximum setting you achieve around 500 Lux on the work surface. If you have an open kitchen-dining-living area, you could possibly use the island lighting dimmed in the evening as ambient lighting. Lower hanging lights make the room visually more interesting and cozier.
2.) I would definitely also install the recessed lights above the sink, but place the light switch in this area as well. Here also around 500 Lux on the work surface.
3.) If you already have recessed or surface-mounted lights, then around the island. Here about 250-300 Lux.
Definitely no 100mm installation boxes but 180mm ones. The element ceiling always consists of several parts. It may be adjusted during installation and the workers in the factory do not always work precisely. You will be glad to have some leeway :) .
