Is it possible to leave a newly built apartment empty without mold?

Hello, we are currently buying a new apartment in Berlin, everything should be ready by early 2020. However, we will not move in immediately because I still work in another city. We will probably move in only in 2021. We thought that was quite good. This way we can take a little more time to choose a nice kitchen, maybe install built-in closets, etc.
Now I am reading everywhere that new buildings are damp and you have to ventilate and heat quite complicatedly to avoid mold. Only: we do not live in Berlin! Of course, we will come by every few months and can then ventilate. But the rest of the time the apartment is empty, the windows of course closed. Is that a big problem?

Yes. If the house community gets wind of it, they will also not be happy in terms of the building fabric if the apartment is not maintained. Is there a ventilation system?

Find someone who can air out for you if you don't have a technical solution for it.

Proper heating and ventilation is certainly not unimportant... Heating shouldn’t be a problem, you can adjust it accordingly. Ventilation... Yes, if you don’t have a ventilation system.. then someone should enter and ventilate regularly.

Or else clarify that window rebate vents will be installed. Costs a little extra, but at least ensures basic ventilation

They should be installed as a minimum according to the Energy Saving Ordinance - I guess. The OP would have to inquire about that.
