What comes to mind first goes in a completely different direction. Will this extension be insulated on the outside afterwards as well? Not much can be seen in the photos, but the wall structure consists of only one layer of stones, right? Then the problem at the end is not the roof, but possibly the transition to the walls, because after the insulation work the top will probably always be significantly colder.
