I just had interested parties with similar questions in the office until now. So I’ll simply pass on my answer to you:
"Everything I say in a personal conversation, I’m also willing to put down in writing and thus make binding."
That sometimes leads to — for me — absurd situations, but it gives the interested parties a good gut feeling. The latter is no less important than presented financial data and references.

Is it common to add a list to the work contract that indicates surcharges for the various items/services?
