If you really want the wall to be straight, you can't avoid leveling it. Either with battens that you adjust to the contour and then plasterboard in front – or you have it plastered and give the plasterer exact instructions on how straight you need it.
If the beam only sticks out at the top and doesn't bother you completely, I also find the idea of leaving it visible charming. Especially in old buildings, something like that can work really well if you deliberately showcase it. Sanding, oiling, maybe indirect lighting – there's a lot you can do.
It depends on whether it has to be technically "gone" for you or if it can become a design feature.
