House sale to parents - When does the transfer of ownership occur

Would it still be possible for the transfer of ownership to take place through the registration of a land charge on the remaining amount as a private loan? (so not only a priority notice of conveyance, but the actual transfer of ownership.)

Why not? Whether you or a bank is listed in the land register doesn't matter. Written private loan agreement as well, and always make sure to have the enforceable version. The thing is like cash.
