Then the drywall installer should have pointed that out to you. Then you would have had the option to either let him continue working crooked like that, or pay the extra effort to compensate for this unevenness. But it would have been your decision, not his.
And a general tip: If any craftsman tries to brush you off with "That is according to the rules" or "That's what's stated in the DIN," always kindly ask to be shown these rules.
