Can someone recommend a good construction company in Hamburg and the surrounding area?

I read in another thread that you do not have a plot of land yet. I would take care of that first. It is certainly not wrong to inquire with various BUs in parallel, but a land search can take several years, and much can happen in the meantime.

For some plots of land, however, it makes sense to have a construction company and some favorite house designs beforehand if the plots present difficulties and the construction company can check whether the ideas are feasible. Or not?

Well... My opinion: conditionally.
Basically, you should already familiarize yourself a bit with the regulations, guidelines, etc., not only for house building but especially there, so that, for example, you can roughly read the development plan.
Then you should know your space program, how much space for what and roughly where. What can you live with, what not, what is mandatory or never to have. How much money is available a) for the plot of land, b) for the house construction. What do the ancillary building costs include in Hamburg or the surrounding area. Basement yes or no... Hamburg -> flooding, bomb disposal or search.
A construction company will probably send you home again if you want something from them without having a plot: it is a waste of their time to deal with everyone who might never find a plot that is free to build on, i.e., without a developer.
Or they make you sign something that binds you to them and can be expensive for you.

I think it is even important to know who you want to build with, but you will hardly find a company that invests time and effort into a concrete offer. However, I can say from my own experience that it is super difficult once you have found a plot of land. Because in Hamburg, it is more like you have to decide very quickly whether to buy the land. With us, the real estate agent already wanted to see a financing offer from the bank for the house & land 3 days after the viewing, otherwise, we would never have gotten an appointment with the owner. The notary was 2 weeks later, and no construction company will give you such a concrete offer on such short notice.
It is somehow difficult to find the good middle ground. Look at who you want to build with, listen around, also ask about additional construction costs (especially the popular “Pfeifenstiel” plots are then significantly more expensive). In the end, you can still change the developer after the bank’s financing approval, but the loan amount is then fixed.
Have you already explored a total volume for your project?

As a construction company, I can recommend kage from hohenlockstedt. They build a lot in Hamburg and the northern surrounding area. They have a large model park right at their doorstep. Just take a look, it doesn't cost anything. I had to google the address, links are not allowed here.

Regarding the topic itself: of course you can also look for a builder without a plot of land. But you will always be asked first if you have a plot. On the one hand, what you can even build depends on the plot, on the other hand, it is sometimes not easy to find a piece of land at all.
