Directly opposite the stairwell is the "air space" under the pitched roof (30°). The kitchen side is under the flat attic.

I find option 2 nicer, for example when visitors are around, but if you have an airspace and then it's open at the bottom, it will probably be very loud

Did you mean "dining table under the airspace" correctly? I also like this variant. I find the other one somehow practical too with a large and open kitchen...

From a living room, stairs, elevator, toilet, and study branch off; cooking takes place in a dining room with a balcony. Aha. For which cultural sphere is this tiny penthouse intended? - in Germany, it seemed at least slightly strange.

Mine would be the second one.
