Drywall - Which profile for which application?

Hello everyone,
I am currently working on advancing my interior construction. Among other things, the installation of the drywall panels is coming up.

When it comes to "profiles," I am an absolute beginner and want to understand which profile is used for which application.

- Recessed profiles with or without adhesive tape >> As far as I understand, these profiles are used for connection to windows and, for example, door elements. For example, I have a wooden lift-and-slide door - this would have to be connected with a recessed profile, right?
What is the advantage of having adhesive tape or not?

- End profile >> Connection to "other components" For example, our purlin is visible. You would connect with an end profile here, right?

As far as I can see, the end profiles are only attached after the installation of the drywall panels.
The recessed profiles would have to be fixed during the installation, right?

What is better: aluminum or plastic?

Does anyone know a good website or book on this topic that explains the differences?
