I can only imagine that the coffee emits a scent that the snails do not like because they certainly won't eat it. Fresh plants are much more tempting.

I think it is more the toxic effect of the caffeine. If they eat it, they consume so much caffeine that they croak.
Coffee contains about 2 g of caffeine per 100 grams.
A rat dies at 0.38 g, a human at 10 g (LD50).
Snails probably tolerate much less.
Don't worry, a cup of brewed coffee contains only 0.15 g of caffeine.
