In construction projects, for example, a freshly poured ceiling is often loaded or further work continues as early as the next day.

Isn't that bad for the concrete that has not yet fully cured?

As a rule, the freshly poured slab is still supported by numerous props for days/weeks. When constructing the floor above, the exterior walls and load-bearing interior walls usually sit above the corresponding ones below. Therefore, the load on the fresh concrete slab is probably relatively low. Overall, the risk of "warping" is, in my opinion, low. Of course, there is a structural engineer who monitors such things (or should).
