Looking for project planning software (No CAD/BIM!)

Hi, dear builders!

We will be renovating our house in the near future. Much will be done by ourselves, but of course some things will also be done by the respective trades.

I am currently looking for a project planning software (not CAD or BIM software!).
It is about defining different planning phases, defining tasks and subtasks, etc. I want to set workflows or sequences.

Some kind of documentation would also be great. Both for the status of the construction as well as in advance during the companies (comparing offers, etc.) and also idea finding (photos, links, texts).
Ultimately, I will probably be the only one working with it. But my partner might also use it sometimes...

Does anyone know something?

I have already tried quite a few, but many offers are more aimed at software development or teams with hundreds of members.

The cherry on the whipped cream would be free software that runs on Linux or preferably also on a headless server :D. But it also works without.

I would have suggested Office 365 with an E3 subscription until I read something about open source and Linux :)

Planner, SharePoint with OneNote, and Project should work well for your purpose. Except for Project, I used this for my construction project, although I didn't have to coordinate any trades except for painters, tilers, and myself. That worked without software. But to manage offers, services, to-do lists, etc. properly, OneNote including SharePoint was great.
