Improper execution of drywall

Hello,
our house is currently being built by a general contractor. I regularly make inspection rounds in the house.
During the shell construction phase, everything went quite well so far. Now that the drywall installers are in the house, things are starting to get funny.
Attached are a few pictures of things that I consider absolute botching and will actually complain about soon. I just wanted to check with you beforehand whether I am overreacting or if this already falls under the category of "improper execution."

Nice is different, but everything will still be filled in. I wouldn't accept pictures 1 and 2 as they are, the rest is actually not such a big deal to me as a layman. Using mesh tape and plaster, the joints should disappear. If the house is not perfectly straight, such gaps can happen. But maybe I am too lenient from afar. Everything was spotless with us... only the plasterers were sloppy... hehe had to sand thoroughly in some places. I would be very attentive with you in the future, apparently your GÜ doesn't care what his people do.

So honestly, if you had said now: this is our own work ... then I might not have said anything, but if THAT is supposed to come from professionals, I would definitely complain about it. I myself (yes, also as a woman) have done drywall work "myself" and for me / us it certainly looked different. If that were my house, I would definitely also set up the "list of defects" here.

Hello,
it goes on; I was somewhat surprised by the execution of the connections of the attic walls to the vapor barrier. See attached documentation.
What do the experts say, how is this usually done? I think the foil should be plastered over.
What happens if a wall no longer receives plaster? How is it properly sealed in such cases?
