Drywall during renovation work

Evening everyone,

I am currently renovating. Some things only become apparent once they are in place.

We want to leave the beam open spontaneously. However, the pipes need to disappear behind a wall.
I want to have it flush with the wall and beam.
How/with what is it most sensible to make the substructure?
Fill the open spots with PU foam? Or add mortar / bricks in the breakouts?
Same with the door passage. Here I would simply work with squared timber and then screw the wall there.

You can box in these pipes. For this, U30 profiles are used on the ceiling, the wall, and the floor. Where the iron support is, a U30 or better a CW profile is also used. Then a suitably cut drywall board is screwed onto one of the two sides, on the inside of which another U30 profile is screwed. The second board is then attached to this. This way, the box would already be finished except for the edge protection and the filling work. I would brick up the large holes around the support and plaster them neatly all around with a visible edge protection profile. I didn’t quite understand the rest. Where there apparently used to be a door, you now want to completely close the opening?
