Cost of some trades - Where is self-performance worthwhile?

What exactly are Gewerke? I am hearing this term for the first time and cannot imagine anything at all. Could the author of this post briefly enlighten me? Of course, someone else can also briefly clarify it for me. Thanks in advance.
